Radiatori Pasta

Radiatori, named for their resemblance to little radiators, are a ruffled, ridged short pasta designed to hold as much sauce as possible. Our Capparelli at the Mill Radiatori is bronze cut and slow dried, giving it a rough, porous surface and a firm, satisfying al dente bite. The deep ridges and small crevices trap creamy sauces, rich ragu, roasted vegetables and pesto, and the shape holds up well in baked pasta dishes and pasta salads. Cook in well-salted boiling water until al dente.
