⭐️⭐️ Great Taste 2026 — Outstanding Award Above and beyond delicious, impressive quality, and a great example of its kind; won by about 10% of entries.
Nepalese Timut Pepper is one of the world's most extraordinary spices — a rare, hand-harvested pepper from the high-altitude Himalayas with an explosive citrus aroma and a distinctive tongue-tingling finish. If you've never experienced Timut pepper, prepare to be surprised.
Bursting with intense notes of grapefruit, lemon, and floral citrus, Timut pepper delivers a complex flavour journey that builds from bright citrus to a warm, peppery depth — finishing with a mild numbing sensation on the palate, similar to Sichuan pepper but uniquely its own.
What the Great Taste Judges Said
"These peppercorns offer an intense and unique floral-citrus nose. This follows through to the palate, with a powerful and building interplay of rich perfumed florals and grapefruit/lemon citrus; the tingling, numbing effect on the tongue lends immense length and dimension."
"Grapefruit leads the way, with an initially mild warmth that builds into a deeper peppery layer, with an almost numbing sensation — very unusual, very delicious and very versatile."
"It is a really interesting flavour that would enhance many dishes."
How to Use Timut Pepper
Timut pepper is exceptionally versatile — use it freshly ground or whole to elevate:
Fresh seafood — prawns, scallops, crab, and fish
White meat and poultry
Roasted and grilled vegetables
Desserts — chocolate, citrus tarts, and panna cotta
Chutneys, curries, and spice rubs
Cocktails and infused oils
About Nepalese Timut Pepper
Timut pepper (Zanthoxylum armatum) is grown at over 2,000m altitude in the Mahabarat mountain range of the Himalayas, Nepal. It is hand-harvested by local farmers and dried naturally in the sun — a slow, traditional process that preserves its extraordinary aromatic oils.
Unlike black pepper, Timut is a member of the Zanthoxylum family, related to Sichuan pepper, and prized by chefs worldwide for its citrus intensity and palate-tingling quality.
