We harvest our olives at three optimum times in the ripening process, producing three distinctive taste profiles: from the fresh, grassy and tomato tones of Verde Harvest to the smooth, creamy elegance of Negra Harvest, with Envero Harvest in between, bringing balance, fragrance, and finesse.
