The Story
We’re based in a former inn on the edge of the Irish Sea. We started In the Welsh Wind with a pretty simple (if slightly obsessive) goal: to bring grain-to-glass distilling back to West Wales. We aren't just "bottling" here; we’re part of the whole cycle. From the soil in Ceredigion to the final cut of the still, everything we do is about making sure you can actually taste the coast and the grain in the glass.

What makes us different?
We work with local farmers to grow our barley within 10 miles of our front door. We’ve even revived the old practice of on-site floor malting.

One thing we’re really proud of is our "Green Malt" whisky. We skip the kilning process entirely, which is extremely rare in the whisky making process. By using unkilned grain, we keep those fresh, grassy, savory notes that usually get burnt away. We will continuously integrate this into our whiskies as we move forward and test the boundaries and norms of whisky.

The Liquid
If you’re here, you probably care about how things are made. We distill slowly, very slowly, to keep the essential oils in the spirit. It’s why our spirits are consistently recognised on the world stage.

We’re just a team of locals doing things the long way because we think it tastes better. Thanks for being part of the journey.
