Seoul kimchi is about clarity and balance. The flavours should be bold but not overpowering. The texture matters too. Vegetables should stay crunchy, not mushy. That crunch means they still contain the fibres your gut needs to stay clean and healthy as the kimchi travels through your body.

Kimchi can be usually quite salty and spicy, and in Korea, we are often advised not to eat too much of it because of its saltiness and spices. That’s why we make our kimchi differently: with less salt and no added sugar.

To us, kimchi is a form of medicine, and the key to its healing potential lies in fermentation. To benefit from it fully, kimchi shouldn’t be too salty or sweet, Our recipe is designed to support your gut health, not just excite your taste buds.
